Serwet Aysan is currently collaborating with her mother to write a cookbook out the dishes of her Kurdish youth. Here she demonstrates two popular dishes, in vegan form (to which those who prefer it can add meat). First she makes tirşika balcanê reş, a stew of eggplants, onions, green peppers, celery, potatoes, and tomatoes simmered in garlic, tomato paste, and olive oil.
